PHF/TCS food prepared from ambient and /or pre-chilled ingredients cooled to 41°F or below in 4 hours Observation: There were three containers of tomatoes that were cut around 8am this morning (8-21-15) that exceeded 47 degrees at 3pm. Discussed the dangers of improper cooling of PHFs with the GM. Discussed options to aid the cooling process. Tomatoes were discarded at time of inspection.
