Observation: Wire racks in two door cooler (opposite to ovens) continues to have rusty characteristics. This is REPEAT violation.

Observation: Person in charge unable to present the established written procedures to follow up for responding to vomiting and diarrhea events.
- PHF/TCS food maintained at 135°F or above, except during preparation, cooking, cooling, or when time us used as a public health control
Observation: Cooked hamburger patties temped between 110* and 124 *F on hot holding table in serving line and they were on very shallow tray. Person in charge corrected by reheating to 165* and putting them on deep trey so can maintain 135* temperature. Corrected on site.

Observation: Three employee did not demonstrate adequately the knowledge of the procedure for where and what to do in case of Norvirus events and clean-up kit.
- When to wash
Observation: Employee is touching clean dishes, just out of dishwasher machine with no washing hand or donning gloves before operation while talking to food inspector. Employee was confused and re-washed the hands, put the gloves on and continue the operation. Corrected on site.

Observation: Cooked hamburgers (111*F) and veggies (124*F) were on steam table. Items were reheated to 165*F. Must maintain all hot food at 135*F or above.

Observation: Wire racks in 2 door cooler (opposite ovens) have become rusty. Racks must be resurfaced or replaced to prevent contamination. Cooler number 001042.
- Multiuse food contact surfaces are cleanable
Observation: Chef knives were being ground manually with a grinding stone. May not grind knives as this process will compromise the integrity of the blade. Knives were discarded at time of inspection.
