    Observation: Cook wearing watch and braclets while conducting food operations, prep. & service. Corrected during inspection.
  • Manual and mechanical warewashing equipment, chemical sanitation - temp, pH, concentration, and hardness
    Observation: 0ppm for bleach based chemical sanitizer in mechanical wash machine. Sanitizer bucket was empty, changed out and corrected during inspection.
  • Date marking for ready to eat, PHF/TCS food prepared on-site or opened commercial container held for more than 24 hours
    Observation: no date marks on cooked roast beef, beef broth/grease, made in establishment italian dressing, meatballs and baked potatoes in walkin cooler.

    Observation: ice scoop stored on soiled drain board at bar area. Ice scoop washed and sanitized, corrected during inspection.

    Observation: Items at small salad bar at 50 degrees F (Cottage Cheese), voluntary destruction of all TCS/PHF foods in salad bar (bar set up at approx. 10:00am). Reviewed w/ owner/PIC that ice level shall meet or exceed the level of food in each container and to utilize containers that best allow cold transfer to foods on cold hold (e.g. stainless steel). Corrected during inspection.
