Observation: Caulk at the 3 tank sink and wall juncture is in disrepair. Remove existing caulk and re caulk so sink/wall juncture is easily cleanable.

Observation: Hood filter have dust build-up. Clean and maintain cleaning at frequency to prevent future build-up.

Observation: Wall under 3 tank sink and dish machine has visible food splatters. All non food contact surfaces must be clean to sight. Clean and maintain cleaning at frequency to prevent future build-up.

Chlorine in dish machine was measuring at 10 ppm. For proper sanitization chlorine must be maintained between 50-100 ppm. Service called during inspection. Dish machine is not permitted to be used until machine can properly sanitize dishes and utensils.

Protective coating on light bulb in pizza warmer is damaged. All lights exposed to food and food items must be shielded or shatter proof. Replace bulb.

1) Can opener blade had dries debris on it. 2) Butter brushes ahnging up clean were greasy to the touch. Food contact surfaces must be clean to sight and touch. Clean above mentioned areas.

When preparing or cooking food an effective hair restraint must be worn. An effective hair restraint includes hat, visor, or hair net.
- Plumbing system repaired according to law
1) Faucet on hand sink in dish room is leaking. 2) Drain line on food prep sink leaks. All plumbing must be maintained in good repair. Repair as needed.
- Handwashing sink equipped to provide water at a temperature of at least 100° F through a mixing valve or combination faucet.
Hand sink in dish area did not reach 110 degrees during inspection. For proper hand washing water must reach 110 degrees. Repair as needed.
