    Observation:The two doors reach in-cooler "Habart" has two rusty racks. Replace or resurface to prevent contamination.

    Observation:Butcher block table by the prep sink has pits and indentations that appears to be metal in the wood. The table must be resurfaced or replaced. REPEATED VIOLATION.

    Observation: Damaged knife found in the kitchen.All utensils must be maintained in a good condition. Damaged knife already removed. Corrected.

    Observation:The following areas are missing cove base. Dish machine,prep sink,employee rest room areas and behind victory three door cooler. There are also numerous broken or missing tiles throughout the kitchen that need to be replaced. Floors and walls need to be smooth cleanable surfaces.

    Observation: Light in dry storage area needs to have shatter resistant bulbs installed or a light shield installed.

    Observation: The following areas are missing cove base: dish machine area, prep sink area, behind Victory 3 door cooler, and employee RR. Also floor under 3 hole sink is missing parts of tiles and is no longer cleanable. Floor will be replaced in summer with 3 hole sink according to manager.

Must provide an adequate cover or shatter resistant bulbs to prevent contamination.

    Did not have a handwashing sign posted in kitchen handsink. Must post a sign informing employees when to wash hands at all handsinks used by food service employees.

Water from cooler is not potable and therefore could contain contaminants. All equipment must be maintained in good working order to prevent buildup of bacteria and contamination. Must investigate source of leak and repair or replace as necessary. 2) Butcher block cutting board by prep sink has what appears to be metal fragments inside wood surface. Must resurface wood to remove metal fragments or replace if necessary. Wood surface must be smooth, easily cleanable, and non absorbent to prevent contamination and buiildup of bacteria. 3) Observed metal scoop that was cracked. Must keep all utensils in good condition to prevent buildup of bacteria and spread of disease. Discarded at time of inspection.
