Observation: Rinse sink was not filled with rinse water while washing dishes. They have been trained and are not filling the middle sink.

Observation: Hand sink in kitchen had no paper towels. Employee corrected at time of inspection.
- Foods are cooled using appropriate methods
Observation: Cooked beans cooling in walk in refrigerator in large pot with cling wrap on top. Beans were transferred to 2 metal pans, put on top shelf and will be stirred periodically.
- Separating raw animal foods from raw ready to eat food and separating raw animal food from cooked ready to eat foods
Observation: Packaged pork above produce in produce case. Pork removed and transferred to meat case.
- Storage and maintenance of wet and dry wiping cloths
Observation: Wet cloth laying on the counter in kitchen. New cloth was put in new sanitizer bucket.

Observation: Violations show that he is not educated in requirements of the food code.

Observation: Wipe towels in kitchen to be stored in sanitizer when not in use.
- Food temperature measuring devices are provided and readily accessible
Observation: All refrigeration will have thermometers. Cooler and probe needed in kitchen.
- Using a handwashing sink- operation and maintenance
Observation: Large red hose used to fill hot water in 3 compartment sink from hand sink. Will buy a release coupler when having to use red hose when sink needs to be filled.
- Test kit provided and used to measure sanitizing solution concentration
Observation: Test kit needed to test the quatinary sanitizer.

Observation: License to be posted.

Observation: All re packaged food must have a label. Salsas, marinated carrots and cold baked products.

Observation: West side of large cooler is at 50 degrees. Food removed. Repair man add freon during inspection.
