Storage and maintenance of wet and dry wiping cloths Observation: Wet wiping cloth was observed stored on a plate. All wiping cloths that are maintained wet must be stored in sanitizer to prevent contamination.
Common name-working containers Observation: Sanitizer bucket did not have a label. All working containers must be labeled with common name of product.
Toilet room receptacle, enclosed, fixtures clean
Material characteristics of non-food contact surfaces Observation: Black non-slip mats by the espresso machine have become scored and stained. Replace mats or use opposite side to prevent buildup of bacteria and contamination.
Plumbing system maintained in good repair Observation: Faucet by the dish machine has a leak. Must keep all plumbing in good working order to prevent buildup of bacteria and contamination.
Cleanability of floors, walls, and ceilings Observation: Wall behind the hand sink (prep area) is no longer cleanable due to the hand sink pulling away from the wall. Hand sink must be re-anchored and sealed to the wall to prevent buildup of bacteria.
