- 3-302.11(A)(2) - --In the white cooler in the kitchen there was a bowl of raw grown beef being stored directly on top of containers of raw pork bacon. Corrected on Site (COS) - this was rearranged to have the bacon on bottom. Explained that the silo method (complete separation of species) is preferred, but if they do not have space for this they should separate by cook temperature, with highest cook temperature on the bottom. (Note - bacon cook temperature is 145 F, ground beef cook temperature is 155 F)
- KDA_3_30212 - --There is an unlabeled squirt bottle in the kitchen that was identified as butter it.
- KDA_3_50118A1 - --In the cooler in the kitchen there was a ziploc bag of hot dogs that was dated 9/7 - 9/14. COS - discarded for being past 7 days. In the cooler under the make table there is a container of tuna salad dated 9/8 - 9/15. Explained to staff that this is dated for one day too many and should have been discarded by today. COS - this was discarded.
- KDA_3_50118A3 - --In the two coolers in the kitchen there were several items that were dated for one day too many. They were as follows: Chicken Noodles dated 9/14 - 9/21 Chili (2 containers) dated 9/14 - 9/21 Chicken Salad (2 containers) dated 9/15 - 9/22 Sliced Tomatoes (2 containers) dated 9/15 - 9/22 Cheddar Soup dated 9/9 - 9/16 Ready-to-eat (RTE) Sliced Turkey (3 containers) dated 9/15 - 9/22 RTE Ham (2 containers) dated 9/15 - 9/22 Cooked Sausage dated 9/15 - 9/22 Gravy dated 9/14 - 9/21 In the Make table in the kitchen: RTE Ham dated 9/10 - 9/17 RTE Turkey dated 9/15 - 9/22 Diced Tomatoes dated 9/15 - 9/22 Chuck Roast dated 9/11 - 9/18 Roast dated 9/10 - 9/17 Salsa dated 9/10 - 9/17 COS - explained the error in date marking to staff present. Explained that the first day it is opened/prepared must be counted as Day 1, held for 6 more days - making 7 days. Explained that as it is now, they are doing the day it is opened/prepared, with 7 days added to it, giving them a total of 8 days instead of 7. Staff is correcting dates.
- KDA_4_60111A - --There is a single-use plastic container that is being stored on a shelf near the coolers in the kitchen. There are bread crumbs/fallen debris in this container. COS - the container was discarded. There is sticker residue on the containers for the candies/jellos/mixes, the salt container, squash container, ranch container, biscuit and gravy container, and noodle container. These stickers were all identified as remaining from the original purchasing of the containers. Explained to staff that these containers should be cleaned prior to being used to store food, and that the stickers should come off in the cleaning process. COS - staff is in the process of getting these stickers removed.
- KDA_4_90311B - --There are stainless steel bowls/colanders on the shelves in the kitchen storage, as well as bowls in the prep/serving area that are being stored neither covered nor inverted.
- KDA_4_90311C - --In the kitchen area there are single-use styrofoam containers under the register, in the prep area, and single-use plastic containers on the storage shelves. These are being stored outside of their original protective packaging, neither covered nor inverted.
- KDA_7_30111B - --In the back storage room there were two bottles of Aloe Vesta Bath/body wash being stored on a shelf directly above Hefty Freezer bags. COS - a staff member moved these upon request. Note - the staff member said that these items had been removed from the retail shelf because they were not selling, and that they were going to donate them. She said she had mistakenly set them down above the freezer bags a short time previously.
