  • Restrooms with self-closing doors, fixtures operate properly, facility clean, supplied with hand soap, disposable towels or hand drying devices, tissue
    No paper towels at handsink in beverage station area.  No paper towels in Bradley Club room.
    A supply of sanitary towels or a hand-drying device providing heated air shall be conveniently located near each lavatory.

    Missing ceiling tiles in dishroom and chemical supply room.  Wall behind dishwasher with peeling paint.  Ceiling above dishwash area with rust and peeling paint.  Ceiling by fire extinguisher in area of 3 bay sink has a hole in it.  
    Walls and ceilings, including doors, windows, and similar enclosures shall be maintained in good repair.  Replace missing tiles, resurface wall and ceiling and repair hole in ceiling.

    1) Large serving plates in kitchen were found to be soiled and not stored inverted.  Store inverted to protect food contact surface.
    2) Ice machine in server hall was found to be soiled.  Clean and sanitize on a routine basis to ensure food safety.
  • Storage/handling of clean equipment, utensils
    Utensils in kitchen and uncovered silverware in warming kitchen found going ever which way.
    Facilities for the storage of knives, forks and spoons shall be used to present the handle to the employee or the consumer.
    Utensils shall be stored covered or inverted wherever practical.
  • Single service items properly stored, handled, dispensed
    Single service articles in store room and warming kitchen were found sitting right side up.  Store inverted to ensure proper food contact protection.

  • Critical: Hand washing sinks installed, located, accessible
    No Handsink found in Catering Kitchen server station room by service elevator .  -Civic center will add handsink by locating paper towels and a soap dispenser at a dump station on server line and labeling Hand Washing Only.
    Lavatories shall be accessible to employees at all times.
