Observed QUAT at sanitizing hose at greater than 400 ppm./ Call ECOLAB. Dilute current mixture by adding one part water to attain 200 ppm.
Observed roast beef 54F in right reach in cooler. Oserved turkey, chicken and tuna salad 44-47F./ Cold PHF to maintain at 41 F or below. Corrected on site. Spread meats in thin layer on tray covered with wax paper. Move to walk in cooler for rapid cooling.
