General Comments that relate to this Inspection No violations observed at time of inspection. Thank you. Both stainless steel two door reach in cold holding units checked OK and w/in regulations.Discussed with operator to store employee personal food separate from food used in the operations of the center. No food observed being prepared; cooked or served at time of inspection. Washoe County School District Central Kitchen supplies Breakfast; Lunch and Snacks. Food is delivered to Bernice Matthews in insulated bags. Model Dairy delivers milk to Bernice Matthews and the milk cartons are also carted to childcare center. No food is heated at center. Leftovers are discarded.Food cooking activities are conducted at center. Please create a food safety plan or a standard operating procedure for all cooking activities done at the center that involve food and food is to be eaten. Please have these completed within 30 days.

This CFPM will have direct oversight and managerial control of the food handling operations at the childcare center. General Comments that relate to this Inspection All meals and snacks are provided by Bernice Matthews School cafeteria. All food is pre-portioned for children. All food is thermalized and prepared in cafeteria and transported in insulated bags to center in the morning. Staff serves the food to the children for lunch and for snacks. All food is discarded at end of the day. Fruits such as apples; oranges; and banannas are sliced at center. Center has a 2 compartment sink. Center shall designate one well for the purpose of handwashing only. Please post a "handwashing only" sign at the 1st basin. Two containers or plastic tubs can be used for the 3 step cleaning process. The second basin of the 2 well/compartment sink can be used for the 1st step: wash with soapy water and than the two containers set up for the rinse and sanitize step. * All foodservice equipment must go through the 3-step cleaning process. Do test the concentration of chlorine and water sanitizer to be at levels between 50-100 ppm. Center is serving PHF; potentially hazardous foods at center and will require to have at least one CFPM; certified food protection manager who is designated to this center and works at least 30 hours. A list of approved CFPM instructor was given to director at time of inspection. Do have staff take their passing test results; a picture ID; $28.00 dolloars and confirmation of taking an approved 16 hour course to Washoe County Health complex; building B upstairs in Environmental Health to obtain their Washoe County Food Protection Manager certificates and post them on site. The WCHD is located at 1001 E Ninth Street in Reno.Corrective items to be repaired by 08/27/12:1) Adjust hot water at kitchen 2 basin sink to reach at least 100 F. 2) Post a "handwashing only" sign at first compartment of kitchen sink.3) Acquire 2 or more containers for the 3 step cleaning process. 4) Acquire chlorine test strip/papers to test chlorine to be at levels between 50-100 ppm. Reviewed process with director. Use one cap of bleach to one gallon water. Notes:All cold holding units checked OK and thermometers present.Please call health inspector at 328-2682 when items have been completed. OK to issue permit; OK to operate. Please post official health permit in kitchen once received via USPS. Post Washoe County Food Protection Manager Certificate on site once obtained in kithcen as well. A unannounced inspection will occur in 2013.
