CFPMs: James Brennan has an expired certificate; but is planning on recertifying. James Bennet has a certificate; certificate not available at time of inspection.Facility has not had employee(s) take and fail one of the recognized CFPM exams in the past year.No violations noted at time of inspection.Facility manufactures and packages juice under a HACCP plan. All ingredients are received pasteurized. Final products are shelf stable. Reviewed HACCP plan; prerequisite programs; testing procedures; reviewed logs; lot tracking procedures; and recall procedures with no issues noted. CCPs include screening juice; magnetic detection; and filtering the juice. Please add to employee health policy that any employee with gastrointestinal symptoms shall be excluded for the duration of their symptoms plus an additional 48 hours.Notes:-hand sink stocked; no bare hand contact policy in place; discussed handwashing with employee with no issues noted-cold holding checked ok - raw material coolers at 35F and 37F; OJ cooler at 18F-daily environmental testing is completed before production may begin-3 compartment sink and test strips available - measured at 400ppm quat-food properly stored-lot code tracking system in place; facility conducts mock recalls-chemicals labeled and properly stored-ice machine clean; for employee use only-all employee personal items properly stored-linens by Cintas; good separation and storage-dumpster ok-facility is clean and well maintained-regular pest control by Clark; no issues noted at time of inspection-discussed employee health - ensure anyone with gastrointestinal symptoms (vomiting / diarrhea) is excluded for 48 hours after symptoms stop.
