[4] Sanitization rinse; clean; temperature concentration; exposure time; equipment; utensils sanitized 140) Sanitizer level in 3 compartment sink not adequate. Maintain adequate amounts of sanitizer to ensure proper sanitization.Quats sanitizer in 3 compartment sink too weak. Used test strips opt increase to 200 ppm. Corrected immediately.
General Comments that relate to this Inspection -a couple other issues--did not deduct points as this was first inspection--paper towel dispenser was installed so that it makes hand sink difficult to use--manager agreed to find new place for paper towels to make hand sink more eaccessible--noted a funnel; stopper; etc. in hand and dump sinks--keep all items out of these sinks to prevent hand contamination of equipment---post alcohol warning in bath rooms or at door way to bath rooms so the signs can easily be read--no other problems noted--facility is clean; well-organized--raw shell eggs stored at 40 F--walk-in @ 36 F.-

General Comments that relate to this Inspection Ok to isue permit to operate.The folllowing items must be corrected prior to opening:1) Provide ice machine's drain line with one inch air gap over sump in basement. Drain hose observed inside ice bin of ice maker must be routed outside of ice maker and be connecte to the ice bin drain line. Empty ice bin and clean/sanitize the interior. 3) Provide covered trash receptacles in both restrooms. 4) Install under counter lights over bar equipment. 5) Clean and sanitize all work surfaces; food contact surfaces of equiment and utensils.Risk category 1 assigned. No CFPM required for this facility.Plans to open on 3/18/2013
