Run glass washer twice before running dishload to ensure it reaches 120 F when it has not been rum for a long time period.Quats concentration checked at 200 ppm in sanitizer in 3-compartment sinkNoted hand sinks at front and back areas and in restrooms stocked and functional.Bar refrigerators at 38 F.Dumpster enclosure noted to be clean.

No violations observed at the time of inspection.OBSERVATIONS & RECOMMENDATIONS:- All refrigeration temperatures observed were at or near requirements (reach-in 32F; 3-door glass reach-in 34F).- Test strips were available for both the 3-compartment sink and the dish machine. Dish machine tested 50ppm bleach; sink tested 100ppm quat. - Ensure that countertops are sanitized with sanitizer between customers and after cleaning. When washing dishes in the 3-compartment sink ensure that you follow the wash; rinse and sanitize procedure. Allow dishes to be fully submerged in the sanitizer for a minimum of one minute and then air dry.

OBSERVATIONS & RECOMMENDATIONS:- Test strips available for checking dish machine sanitizer rinse and 3-compartment sink. Tested dish machine at 50ppm chlorine residual. Maintain 50-100ppm chlorine.- Ensure that the access to the hand washing sink in the back room is not blocked. All hand washing stations must remain accessible at all times during operation.- All ambient refrigeration temperatures were at regulation temperature.
