DIshwasher checked at 120 F and 100 ppm chlorine concentration; have dishwasher serviced if chlorine not maintained atr 100 ppm continuosly. chlorine checked at less than 50 ppm on the first operation.Noted hand sinks stocked and functional.Noted scrub pads with sponge in 3-compartment sink. Sponges not allowed to be in contacet with food utensils. Use scrub pads with no sponges only.Ok to issue permt to operate deli.Obtain a stemmed thermometer to check food temperatures.Risk category 2 assigned for this permit. Facility must have minimum of one Certified Food Protection Manager on staff full time who has completed a Washoe County approved certification course by 8/15/2012. When CFPM obtains WHCD's certificate; it must be posted in the facility.
