Notes:Again very well set up two cut rooms; one for just chicken and the other for meat and fish. This helps to prevent cross contamination.Both very clean.Handsinks okDifferent refers for product and all product properly stored.Butcher all meats nothing comes pre cut or packaged.Refer temp on beaf was at 37 to 39 degree F and refer temperature was at 36 degree F.Rooms are cleaned nightly and daily deep.Test strips available.
