  • General Comments that relate to this Inspection
    All violations noted on the previous inspection have been corrected.OBSERVATIONS:- AVB (atmospheric vacuum breakers) have been placed on all the hose bibs. As these are not designed to be under constant pressure; ensure that the spray nozzles are removed from the hose when the hose is not in use.- Sanitizing solution test strips have been provided. Sanitizer levels are now checked on a weekly basis and logged. Corrective action is taken when out of range (200-400ppm or per manufacturer's labeled instructions).- Sanitizing dish machine external thermometer has been repaired. Recommend that a hand held high temp holding NSF listed thermometer be kept on-hand to occasionally double check the integral thermometers. Proper heat sanitizing requires a temperature of 162.5F at the dish and 180F at the jacket (rinse temp).- The leaking center faucet on the 3-faucet hand sink has been repaired.HACCP plan reviewed. No other deficiencies observed other than was was noted in the inspection dated 9-30-14 and this re-inspection.

    - The rinse temperature thermometer on the high temperature dish machine is not operational. Repair or replace. Be advised that production line items/utensils/trays etc. must be sanitized either by high temperature or chemical method. - Operator is using quat ammonia based liquid sanitizer to wipe down equipment. No test strips were available. Must have strips available to ensure proper sanitizer make-up.

    - Backflow prevention device not present on the spray hose in the filling room and in the dish room. Install.- The center faucet of the 3-bay hand washing sink in the production room is spraying out of the faucet base when activated. Repair or replace.

    OBSERVATIONS:- No deficiencies observed in the production process.- All hand washing stations were stocked and operational- All chemicals observed were labeled and stored properly- Refrigeration and freezers are on a central computer monitoring system with backup units in each of the coolers.- Desert roots pest control treats on a quarterly basis for preventative pest control.RECOMMENDATIONS:- Sanitizing logs should be maintained to ensure proper concentration of wipe down water and dish machine rinse. This procedure should be part of the SOP section of you HACCP plan.- Observed the ice scoop in the filling room being stored directly on the ice machine. Recommend that the ice scoops be stored in a clean container which can easily be run through the dish machine on a routine basis rather than on top of the machine which may not get cleaned on a frequent basis.- Ensure that all hand washing stations remain accessible at all times during operation (no storage in or around the sinks). Recommend that a hose hanger be installed to prevent the operator from storing the spray hose in the sink.

    No violations noted at time of inspectionGeneral Notes:-facility manufactures frozen dough products-sanitation room in use for all food handler employees (includes hand wash station; food wash; air shower)-all hand sinks stocked-gloves; hair nets; face masks in use for all production area employees-discussed HACCP plan with no problems noted-discussed recall procedures with no problems noted-all refrigeration unit on continuous electronic monitoring systems - all temperatures within regulation-chemicals labeled and stored properly-food and single service items stored 6" above ground in dry storage room-restrooms stocked and clean-regular pest control by Desert Roots-discussed employee health policies. Ensure employees ill with gastrointestinal symptoms (vomiting and/or diarrhea) are excluded for 48 hours after symptoms stop.*Ensure a CFPM is obtained within 30 days. Ensure at least one employee takes at least a 16 hour course by a WCHD approved instructor and obtains a WCHD CFPM certificate.

    Ok to issue permit to operate.Observed pan washer at 150 F on wash cycle and 184 F on final rinse cycle.All freezers and refrigerated rooms are monitored through computer system. Observed in computer that all areas are operating at proper ambient temperatures.Risk category 2 assigned. Facility requires minimum on one Certified Food Protection Manager on staff full time who has completed a WCHD approved certification course by 8/10/2012. Per mgmt two empployees have WCHD's certificates. Obtain certificate of employees and keep them posted in the establishment.Plans to open on 6/11/2012
