    No food products observed being prepared at time of inspection. A non-NSF commercial refrigerator is stored in kitchen area for personal employee food. Owner stated that no food products are stored in refrigerator for the manufacture of kimchi or any other pickled product.Please get a thermometer for personal refrigerator and monitor for 40 F or lower.All food observed properly stored and clean equipment stored off ground.All food labeled and covered.Hand sink properly stocked with liquid soap and sanitary disposable towels.Reviewed with operator how to properly make chlorine/bleach sanitizer at 3rd compartment sink. Do test sanitizer to be at levels between 50-100 ppm. Do use a wash; rinse and sanitize steps on all contact surfaces. A food protection manager must be on-site when manufacturing kimchi. Operator's husband Hounmin Kim must be present at all times when food processing or preparation occurs in kitchen.

    Notes:Health inspector conducted routine inspection 1st on 04/11/2011. It was observed that the health permit was assigned improperly. The original health permit F090050 was assigned a risk category 1 delicatessen. Helath inspector #715 observed owner operators manufacturing and packaging Kimchi (pickled hot cabbage). Health inspector submitted "facility action sheet" to change deli to a "manufacturing permit" and change risk category to a level 4. A new permit was issued to the facility: #F110388. A reinspection and a CFPM follow up inspection were also conducted under the old permit #F090050.All future inspections will be conducted under new permit# and permit #F090050 will be closed to history on 12/15/11 by Kim Tran Franchi # 715.No further action is required.
