Observed shelves under prep sink area. Thoroughly clean this area and ensure it stays clean.

Observed sanitizer bucket in place but w/out solution as it was left over from night before. Also observed wiping cloths not being placed in sanitizer buckets. Wiping cloths must be kept in sanitizing solution between uses to prevent bacteria growth. Buckets should be refreshed every four hours. Corrected on site.
