General Comments that relate to this Inspection Hand sink clean and stocked. Sanitizer bucket in place with 300 ppm Quat. Good ice scoop storage. Reach in @ 38F. Ham and burgers @ 41F.

General Comments that relate to this Inspection Facility ok to open. Hand sink clean and stocked. Hang paper towel roll to prevent cross contamination of roll.Quat sanitizer buckets on site @ 300ppm Quat. Test strips on site. Make up unit @ 36F. Burgers @ 40F and Guacamole Aoili @ 45F. Aoili was just prepped. Stem thermometer on hand for temping burgers. Menu is limited to slider burgers with various aoili dressings and chips. Menu expansions must be approved by WCHD prior to implementation. Drink menu is limited to draft beer and mixed drinks. Ensure stantions remain in place to limit customer access to grill.Per SOP submitted prior to inspection all cooking utensils will be washed hourly in Convention Center Dish Room. Grill will be cleaned nightly. All food product will be removed from area nightly and stored in Buffet Kitchen.
