[2] Food protected during storage; preparation; display; service; transportation Observed numerous containers of buttermilk and half and half stored in walk in that were past the best by date. Staff member assigned to this portion of facility planned to have vendor take them back for credit today but they were in area of active use. All out of date items segregrated during inspection and should be segregrated in the future to prevent accidential use by a staff member who is not regularly assigned to this portion of the facility.
[1] Non-food contact surfaces of equipment and utensils clean Observed dry good containers with food debris build up on lids and sides. These containers need to be thoroughly cleaned routinely to prevent cross contamination.
General Comments that relate to this Inspection Hand sink clean and stocked. Restroom clean and stocked. Walk in @ 38F. Good storage practices. *Most items labeled with prep dates. Ensure all items are labeled regularly. Reach in freezer @ 15F. *Ensure items are labeled regularly. Three compartment sink set up with 200 ppm Quat. Sani buckets in use with 50 ppm Chlorine. Facility clean and well kept. *Facility should remove all non working or unused equipment and furniture to prevent accidental misuse by employees or harborage of pests.

General Comments that relate to this Inspection Ok to issue permit. All items from Opening inpsection have been corrected with the exception of the removal of Ecolab chemicals and equipment and installation of faucet to fill the 3-compartment sink. Operator is communicating with property management to possibly continue leasing Ecolab equipment. Facility will be a Risk Category 3. Facility will not be open to the public. It will be a support bakery kitchen for all Hi Point and Joe's Good Java facilites. Facility will be radomnly reinspected in approximately 90 days.

General Comments that relate to this Inspection The following items need to be completed/corrected prior to issuance of permit. Reinspection will occur on Monday; February 2nd; 2015.- Install a faucet to fill the 3-compartment sink.- Cap the sewer line to the right of the dishwasher.- Remove all Ecolab chemicals and equipment. Replace with appropriate detergent and sanitation chemicals to operate 3-compartment sink including test strips.- Provide hand soap at the hand sink.- Secure faucet in bathroom and caulk around the interface between the faucet and sink basin.- Freezer condensate line must drain indirectly into a floor drain with an appropriate air gap.
