[2] Food protected during storage; preparation; display; service; transportation Observed bread stored in refrigerator in non food grade plastic bags (grocery bags).Observed dried peppers stored in Rubbermaid tote. Store all food in NSF or equivilant food grade containers or bags.
[1] In-use food; ice dispensing utensils properly stored Observed 1 container with pan used as scoop and 1 container with handled scoop with handle in contact with product. Use only handled scoops and store scoops in product with handle up or in separate clean container to prevent contamination of food.
[2] Accurate thermometers; chemical test kits provided; gauge cock (1/4" IPS Valve) No test strips available for 3 compartment sink. Provide appropriate test strips to monitor sanitizer concentration. (50-100ppm chlorine or 200-400ppm quat)
General Comments that relate to this Inspection Notes:- hand sink stocked-restroom clean and stocked-refrigerator at 40F - beans at 43F; rice at 43F; meat 40F; thermometer available. Monitor temperature to ensure food is maintained at 40F or below. -discussed cooling procedure with no issues noted-discussed first in; first out procedure with no issues noted-ice machine clean-ice scoop properly stored-facility is clean and organized-have regular pest control by property owner - no issues noted at time of inspection-all food properly stored-freezer at 10F - all food frozen-slicer clean - discussed cleaning procedures with no issues noted-chemicals properly labeled and stored-discussed employee health policy - ensure anyone with gastrointestinal symptoms (vomiting / diarrhea) is excluded for 48 hours after symptoms stop.
