Observed interior of all cabinets dirty. Faciltiy shall wipe down the insides of all reach in cabinets below the food service counter of all debris buildup.

One door cold holding unit recorded at 38 F. Dairy dates current on individual milk containers. Milk on self service line cold holding properly in ice. Whole shell eggs are precooked from manufacturer. Cold holding checked OK and within regulations.Single service items such as plastic cutlery and foam plates and cups stored properly. Handsink in front of self service line properly stocked. Bathrooms observed clean and stocked. No chemicals stored next to food. Microwave observed clean and is used by hotel patrons for personal use. Washoe County Certified Food Protection Manager Certificate for Kim Ginocchio will be expiring next month in June. Please have Kim renew her certification prior to the expiration date. A certified food protection manager who has an active and valid Washoe County certification is required for this snackbar health permit to operate. The recertification class is 6 hours and must be done before June 23; 2015; otherwise the entire 16 hour course will have to be repeated.

The following was observed at the time of inspection:(very limited food operations; menu items consist of pre-packaged oatmeal; cereals; pre-packaged muffins; and pre--mixed waffle mix; juices; and milk.)Refrigeration unit checked at <40F; date marking codes checked ok.All utensils/cups/ are disposable; facility has very limited washing of a few spatulas; tongs; and bowls. Restroom stocked with sanitary towels and soap.Handsink stocked with sanitary towels and soap.Even though utensil washing is very minimal; recommend using a wash; rinse; and sanitize procedure (use 50-100ppm chlorine for sanitization) and let the few utensils air dry. (do not use any sponges)

Facility was opened with a one compartment sink with special instructions for warewashing in one compartment. It is no longer practical for warewashing in one compartment. Install a small three-compartment sink within (6) months by 01/25/2012.Facility shall re-seal shelves in dry storage for a smooth and easily cleanable surface.

The following was observed at the time of inspection:Facility has very limited food products for breakfast: cereal; oatmeal; waffles; muffins; and hard boiled eggs. All products are for immediate service. No hot-holding or buffet items during breakfast**** All products individual pre-packaged for immediate service.Reviewed correction item in detail for three-compartment sanitization.Recommend using a sanitizer bucket in breakfast area for sanitizing table tops after guest leave; use 50-100ppm chlorine or 200-400ppm quatinary ammonia and purchase chemical test kits.
