General Comments that relate to this Inspection This restaurant will be serving Mexican food such as Tacos; enchiladas; burritoes; quesadillas and other Mexican food. The owner of the restaurant is FSP certified and certificate expires in March 2016. Please renew your food safety manager certificate before expiration date. The following items shall be corrected prior to issuing health permit:1) Approved garbage service.2) Install a splashguard at handsink3) Install a mop sink. Currently; a utility sink is located in back kitchen that was being utilized as both a mop sink and handsink. A separate handsink in back kitchen for handwashing shall be separated from mop sink. A designated mop sink shall be installed in an area that does not cross contaminate areas where food preparation of food handling is to occur. The owner will have 30 days to complete this requirement. Use the utility sink as a mop and handsink in the interim. 4) Shield light in walk in refer.5) Post "Alcohol warning" in women's restroom or in a visible spot of restaurant.6) Post a "No Smoking" sign at front entrance.7) Label prep sink "Prep sink only."Owner/operator will be relocating ice machine to bar area. Ice machine shall be indirectly drained to a floor sink. Notes:Cold holding units checked OK and < 41 F. Steam table noted at 175 F.Quat sanitizer will be used at facility and noted at 200 ppm.Ice machine observed clean.Handwashing sinks properly stocked. Please post handwasing signs at each handsink. 3 compartment sink on site and indirectly drained. Facility has not had employee(s) take and fail one of the recognized CFPM exams in the past year. Owner is planning to have 1 employee take food safety certificate exam for initial certification.This restaurant once approved will be assigned a risk category 2 restaurant. At least one full time food safety manager shall be employed at facility to oversee the safe food practices and training of employees. Please call for a reinspection at 328-2682.
