General Comments that relate to this Inspection Ice bin is built into mobile push cart where hot dogs will be cold holding. Please provide a thermometer inside the unit to monitor cold holding to be at 41 F or lower.Steam wells on push cart noted at 148 F. Do ensure that hot dogs are hot holding at 135 F once placed in hotel pans at steam wells. Thermometers noted at time of inspection. This self contained hot dog cart uses gravity flow water system hooked up to a heating element and pump for hand washing. The gray water containment is not adequatey sized for the size of the fresh water containers. Do acquire several gray water containers to operate push cart operations.Mobile push cart will be stored in a storage unit and on private residence. Absolutely no food is to be stored or prepared at home. All food will be purchased day of and prior to start of push cart operations and no leftovers is allowed to be reused or cooled for later use. All ancillary equipment shall be stored at the servicing area and or storage unit that has been approved. Discussed with operator that all food handling and warewashing shall be done at the servicing area El Rosal. El Rosal is equipped to meet all of the capacities for the mobile push cart. This mobile push cart will be serving hot dogs and accompanying garnishments. A separate insulated chest will be used to cold hold prepackaged and sealed drinks. A food safety certificate is recommended for this mobile push cart and shall be obatained within 60 days by 03/28/16. OK to operate; OK to issue health permit.Please post official health permit on cart once received via USPS.
