    No observable sanitizer was visible on test strip when dishwasher was tested. Repair unit to dispense adequate amounts of sanitizer to ensure proper sanitization. Because kitchen staff does not have access to test strips; it is unknown when the dishwasher went down after the last inspection. Highly recommend washing and sanitizing all food contact surfaces in 3 compartment sink to prevent cross contamination within the classrooms. Facility has a 3 compartment sink and signage in kitchen outlining the proper way to mix a bleach solution with a minimum of 50 ppm Cl. Facility must use 3 compartment sink and 3 step cleaning process for all food contact surfaces until dishwasher is repaired. Contact said they are in the process of getting a new; high temp dishwasher.

Glove use may not be used in place of hand washing.

Dish machine sanitizing properly; test strips available; hand sink stocked and operaterational; gloves used properly; all areas clean and well organized.- Thaw only under cold running water or in the refrigerator or cook from frozen. Thawing at room temperature will lead to uneven thawing and may allow the growth of pathogens.- Post the Certified Food Protection Manager Certificate or Washoe County Identification Card or a copy of either. Current regulation requires food manager certificates be posted.
