080) Thermometer missing in cold holding unit. Ensure all refrigeration and freezer ( 4 freezers) units are stocked with a conspicuously placed thermometer in order to monitor unit temperature.

*2nd notice: Operator opening bulk food packages (frozen fish; meats; etc) and repackaging into smaller containers. Operator notified again to discontinue this process unless a hand sink and preparation are is installed. No thermometers at the time of inspection. Stock thermometers (NSF listed) one in each of the four freezers. Freezers must maintain 0F or less.
- General Comments that relate to this Inspection
OBSERVATIONS:- Operator has loosly fitted carpet over the tile floor in the restroom. Be advised that carpet is not an approved floor covering; however; as long as the tightly woven carpet remains clean and maintained it may remain. Lack of proper maintenance may result in the order to remove the carpeting.- Operator is repackaging items bought in cases into smaller lots (frozen fish; sausages; etc.). Pleasae discontinue this immediately. This practice is prohibited unless you install a hand washing sink in the area where you are doing the repackaging. The hand sink in the restroom may not be used for this purpose and gloves are not an acceptable replacement to hand washing. - Ensure that cans which are bulging; dented at the seams or rusted are immdiately returned to the shipper or otherwise not used as the contents may have been compromised.
