[5] Cross connection; back siphonage; backflow Observed dispenser hoses for detergent and sanitizer solutions in three compartment sink submerged below water level. These hoses need to terminate above the water line at all times due to the potential for back siphonage. Hoses shortened during inspection so this item in corrected on site. Observed two hoses in the mop sink area that also need to terminate above the water line of the mop sink due to the potential for back siphonage. Also observed a Y valve on the mop sink faucet that is connected to a chemical dispenser and a hose for running water from that same sink. The Y valve is then overriding the backflow protection device on this faucet. Facility needs to remove Y valve and utilize the faucet as designed. Operator agreed to only have one item connected to the faucet at a time until a permanent solution is decided upon. Chemical dispenser was only item connected at end of inspection.

Sanitizer buckets in use during inspection at 300 ppm Quat. Walk in fridge and freezer functioning properly and well kept. Pico de gallo temped @ 40F.* Ensure food buildup on element above hot holding table is cleaned off regularly. * Ensure all scoops for dry goods have a handle to minimize hand contact with food.* WCHD staff unsure if Maria Aceves' current Prometrics certification qualifies for Certified Food Protection Manager status. Health inspector will look into this further and inform operator if additional requirements are necessary.
