Notes:Reviewed with owners proper makeup of bleach sanitizer. Do use test strips and monitor chlorine bleach to be at levels between 50-100 ppm.All food is being stored at Chemas Real Taco (approved depot). Any leftovers are taken home for personal use and or discarded. No leftovers are to be sold. Mobile truck parks at Coco Boom Nightclub on South Virginia Street; Reno. Truck is being serviced daily at approved depot located at 1825 Prater Way at Chemas Real Taco. Mobile truck has undergone vandalism at depot. Operator is given permission by health inspector to park vehicle at residence. All food must be stored at depot and truck empty prior to parking it at residence. Any changes made must have approval by health inspector. Please call 328-2682 to any menu or location changes.

Cold holding reach in reefer recorded at 40 F; hot holding steam table at 151 F. Handsink properly stocked. Notes:Mobile truck will be preparing and serving tacos; burritos and queadillos along with prepackaged snacks and beverages. This mobile truck will be assigned a risk category 3 and will require a Certified Food Protection Manager within 60 days on 06/26/10.An annual inspection will be conducted after 90 days to verify that the Food Protection Manager has been acquired. Cooling of leftover foods is prohibited on this unit. Only cook what will be sold/served per each day of service. Any leftovers must be discarded or taken home for personal use (not sold).Mobile truck is to be serviced daily at depot: Chemas Real Taco located on 1845 Prater Way; Sparks. Owner shall acquire chlorine test strips for chlorine sanitizer and monitor levels to be between 50 - 100 ppm. OK to issue health permit; OK to operate.
