General Comments that relate to this Inspection Notes:-Discussed the 3-compartment sink that is used for utensil washing for the manufacturing process. The 3 compartment sink at this time is directly drained to sewer. The 3-compartment sink shall be indirectly drained to a floor sink. Facility shall install a floor sink to have 3 compartment drain properly with air gap. This item must be corrected by 03/11/2016.-Discussed the disposal of mop water into the covered hole in the floor via funnel. This method of disposal is okay.-Facility shall provide all HACCP plans for products to the WCHD for review.

General Comments that relate to this Inspection Notes:-Okay to issue permit to operate.-Facility is a risk category 2.-Facility stores and repackages wet (coconut oil) and dry food products (sugar; salt; dried fruit; dried powders). Products come from various suppliers.-Facility has an SQF Edition 7.2 certifiction.-No employees have taken the CFPM exam and failed within the past year.-Facility is registered with FDA and received product recall notices from FDA.-Facility has HACCP plans for wet fill; dry fill; and sifting dry goods. WCHD will review the HACCP plans and determine whether additional information is required.-Facility has SOPs for all processes. Facility is currently writing the coconut oil SOP.-Observed good employee handwashing. Facility has a handwashing policy in place.-Employee hand sinks clean and stocked.-Facility uses chlorine sanitizer in the 3 compartment sink and the sanitizer is replaced every 4 hours during operating hours. Observed sanitizer concentration at 50 ppm.-All food products come in with a Certificate of Analysis (COA).-Food product storage good.-Tools that come into contact with food products are properly stored in a covered bin.-Repackaged food products are seal and weight checked after packaging is complete.-No pest control issues noted during the inspection. Ecolab does the pest control for the facility every month.-All restrooms clean and stocked.-Discussed employee health policy and that employees with gastrointestinal illness (vomiting/diarrhea) may not work for 48 hours after symptoms have stopped.-Facility provides uniforms and towels for employees (supplied and cleaned by Aramark).-No vending machines present at facility.-Oil room repackaging equipment is cleaned after every run with hot water and sanitizer.Washoe County Health District will follow-up on the items below:-Observed no mop sink in facility. Mop buckets are emptied into covered hole in floor via a funnel.-Observed 3 compartment sink which is directly drained. -Oil room repackaging equipment needs to be cleaned as well as the floor underneath the equipment.
