[4] Sanitization rinse; clean; temperature concentration; exposure time; equipment; utensils sanitized Facility does not have permission from McDonald's owner; Rich Pelton; to utilize three compartment sink for washing; rinsing and sanitizing dishes. Facility proposed utilizing a bucket system for washing; rinsing and sanitizing dishes. This system is not allowed. This permit to operate this food establishment is suspended until an approved wash; rinse and sanitization system is installed. All food items associated with snack bar (torpedoes in hot roller) removed from sale during inspection.

[4] Sanitization rinse; clean; temperature concentration; exposure time; equipment; utensils sanitized -Facility contact uses a spray bottle containing a quat solution to sanitize the hold holding rollers; tongs; and tornado containers by just spraying them down. Facility shall use the 3-compartment sink in McDonalds to wash; rinse; and sanitize the tongs and tornado containers and ensure tongs are switched out at least every 4 hours. This item will be reinspected in 48 HRS (2/25/16) to ensure facility has implemented the proper procedures to ensure all food contact items are being sanitized properly.
General Comments that relate to this Inspection -Observed the tornadoes in the walk-in refrigerator at the following temperatures: southwest 38F; pepperoni 35F.-Observed the tornadoes on the hot rollers at the following temperatures: southwest 135F; beef 138F; spicy 140F; pepperoni 141F.-No pest issues noted during inspection.-Unable to discuss no bare hand contact policy with ready to eat foods and employee health policy with management during routine inspection. These issues will be addressed during reinspection on 2/25/16.

[2] Food protected during storage; preparation; display; service; transportation Observed hot dogs and taquitos on rollers holding less than 135F. Per operator; items are held for 4 hours then discarded. Ensure times are documented to ensure that food is not kept in the temperature danger zone for more than 4 hours. Tongs used to serve hot dogs are stored at room temperature. Ensure tongs are also changed out every 4 hours to prevent bacterial growth. Time must be documented.

General Comments that relate to this Inspection CFPM:No other CFPMs at this location.No one has taken an initial exam in the last year and failed.Notes:-hand sink stocked; discussed proper handwashing and no bare hand contact with no issues noted.-no cooling takes place-observed proper thawing procedures-cold holding checked ok - freezer at -5F; all product frozen; walk in - hot dogs 37F; taquitos 39F-facility uses McDonald's 3 compartment sink-hot dogs/taquitos are heated under roller (temped at 145-160F) before being placed on rollers accessible to customers.-thermometers available-food properly stored-chemicals labeled and properly stored-restrooms clean and stocked-date marking procedure in place; discussed first in; first out with no issues noted-regular pest control by Advanced Pest Control; no pest issues noted at time of inspection.-dumpster ok-discussed employee health - ensure anyone with gastrointestinal symptoms (vomiting / diarrhea) is excluded for 48 hours after symptoms stop.
