Food Process Reviewed: Sushi

Inspection prompted due to complaint of cheeses sitting out at room temperature and no conusmer advisory on fresh squeezed orange juice machine. Facility was able to show documentation for cheese stating that it has been tested and it can be left out at room temperature. At time of inspection juice machine did not have consumer advisory. See standard for violation. Complaint closed

Spoke with store manager Jeff, about the recent events involving a possible food born illness. All cheeses left out at room temperature are shelf stable.
The salad with snow peas and garlic that was consumed by the individual is a cold salad. No cooking is required, therefore, no cooling of this specific salad takes place. The salad does contain roasted garlic, however, PIC stated that the garlic is cooled in the walk in cooler on sheet trays and in this specific instance is then combined with other cold ingredients and put directly into a deli case for sale. Salad is held cold and samples are only available upon request.
