PIC Amhed and Rashid. PIC scheduled for ServSafe on the 19th of April. Light bulbs in cooler are shatterproof (Closed violation). 3 compartment sink was setup properly (concentration btw 50 and 100ppm). Facility will be adding an espresso maker in the front; this will require adding a hand sink. Meats were cooked frozen. Chicken thawed in the cooler. Gave hand washing signs. Another follow-up will be completed after Serv Safe training in April.
No violations at the time of inspection. Enforcement hearing will be cancelled. Changed yellow sign to Green.

Consultation conducted due to a fire that the facility had a few days prior. After the investigation, the facility is inspected and approved to operate.

No further action is required.
NOTE: Remember after foods are cooked, they need to be held at 135F or above; or they need to be cooled rapidly from 135-70 F in 2 hours and then from 70-41 in an additional 4 hours. Be sure to follow these important rules so bacteria does not grow rapidly in the foods you are serving.
When cooling you should small, shallow pans, ice baths, or cold running water and this will ensure your foods are cooling properly.
