Facility installed rubber gasket on prep sink drain line which removed the air gap. Remove/ cut gasket to give drain line proper air gap and prevent possible back siphonage.
Facility will be increased to Risk Level 4 for next licensing year to allow them to cook, cool & reheat in bulk & transport for off the premise.

Went to facility to get good working phone number and email.
