Correction: Potentially hazardous cold foods shall be held at 41 degrees F or lower.
Comments: Prep top: Shredded cheese OK at 42, cooked chicken OK at 37, however blue cheese holding at 46 and cooked sausage at 46. Try covering when not in use; if this is not successful adjust temp, if not successful have serviced to hold all foods at 41 F or below.

Chemical sanitizer not present, not at proper concentration, and/or temperature for in-place sanitizer, manual or machine warewashing.
Correction: Maintain sanitizer at proper concentration and temperature according to manufacturer instructions.
Comments: Sani bucket with chlorine sanitizer read at 200+ ppm. Dispenser was acting up this morning (tested OK at time of inspection), so employee mixed it by hand. Please make sure anyone mixing sani by hand knows to use the test strips provided to ensure concentration of 50-100 ppm. CORRECTED ON SITE, thanks.
