Observed the following items held at counter at cookline while preparing for lunch rush and buffet: krab Rangoon 55°F, cooked chicken 50°F, uncooked egg rolls 50°F. Operator stated the items had been out less than an hour and inspector observed these items moved to walk-in cooler. Observed fresh garlic in oil at cart at cookline 79°F. Operator stated it had been out in use about 20 minutes. All items were observed at 11:15-11:30am. At about 12:15, observed the following temperatures: krab Rangoon 46°F, egg rolls 48°, cooked chicken 60°, garlic in oil 60°.

Management stated eggs were received at about 9:30am meaning they were out less than 4 hours at start of inspection. Eggs were moved to reach in cooler and at about an hour later were observed at 58°F. **Corrected On-Site**
