  • High Priority - Potentially hazardous (time/temperature control for safety) food cooked/heated yesterday/on a previous day not cooled from 135 degrees Fahrenheit to 41 degrees Fahrenheit within a total of 6 hours. Food has been cooling overnight. See stop sale. Observed two bulk containers of chicken within walk-in cooler that were cooked and prepped the previous day at 4:16pm and 6:31pm. Observed 6:31 container with temperatures ranging from 47-54°F depending on the location of the thermometer and the 4:16 container with temperatures between 48-50°F. Manager stated the containers had not been out in use since being prepared the night before. Advised manger to leave the lids off or cracked on the containers during the cooling process.
  • Intermediate - Potentially hazardous (time/temperature control for safety) food cooled in quantity deeper than 4 inches. Observed two bulk containers of chicken within walk-in cooler that were cooked and prepped the previous day at 4:16pm and 6:31pm.
