Ok-I'm a day early but I started my corned beef. I have to be at work by 4 (leave the house by 3:30) & I want it to cook for 3 to 4 hours so I just started it.

I bought 3 corned beef last night. I usually buy 2 but this year I REALLY wanted leftovers.

I bought a jar of pickling spice & I put one & a half corned beef in a big pot full of water & 2T of pickling spice.

Then I put one in the oven with about a half inch of water & some pickling spice.

Then the other half I also put in the oven the same way but also cut up half a cabbage & fit it in around the pan & sprinkled brown sugar on top of everything in that pan.

I never made it in the oven before-so here goes! & I never put brown sugar on it either-but how wrong can you get with sugar!!

I just went out on Sat and my hubby had an amazing Rueben that had chunks of Cornbeef in the sandwich instead of the traditional deli meat... and the sandwich was just amazing.... it really was the best Rueben we had ever had..... a way to use the left overs if you got 'em

Had corned beef & cabbage for a late lunch & we will have it again tomorrow.

Loved the brown sugar!

Liked it best boiled-but baked was just fine too!

Mine will be going into the crock pot tomorrow I believe. It gets fall apart tender good in there and I won't have to worry about a pot on the stove or a pan in the oven.

I just had it for the first time EVER on Saturday and it was WONDERFUL. Went out and bought 2 yesterday b/c they were on sale for so cheap. I made it according to pkg directions, except poured in beer instead of water. The cabbage came out tasting like it had cinnamon in it, but the meat was yummy. I put the other one in the freezer for later.

We cooked our corned beef in the crock pot on St. Patty's Day, letting it simmer for a good 7-8 hours, then took that out and put the cabbage in for about 30 min. YUM! It was so good; and I can't even begin to wax poetic about the indescribable joys of corned beef sandwiches on good hearty bread, with swiss cheese and spicy mustard. I think it's my favorite leftover meal EVER. So delicious...
