I have always just cooked the beef in the crock pot. I've never done it with veggies. Do you add the carrots and potatoes at the beginning so they soften enough? Then add the cabbage at the end? Do you season it with anything? How do I know when the cabbage is done?
I don't use a crockpot, on top of the stove. I bring corn beef to a boil, turn down and let in simmer for a couple hours, add a bay leaf. When CB is done, then I add my veggies.
LOL funny thing, I just put a corned beef in my crock pot this morning-- I added onion, carrots and potatoes, and plan on letting it cook for about 7 hours. I realized afterwards that the carrots and potatoes are probably going to turn to mush, but hopefully the meat will be nice and tender! This is my first time doing it in the crock pot!!
Crock pot corned beef came out greaaaaaat. I cooked it for about 8 hours on low- it was very tender and not too salty. I had to scoop out the carrot, taters and onions though and they were a bit overcooked. Just add them a while before cooking and it'll be good.
Hey, just made it. It was one of those dishes that I expected my kids to turn their noses up at. They bravely tried it and I think they each had thirds! My hubby loved it, too! This is definitely a keeper!

Sorry for the hijack, but I was wondering if anyone had ideas for a side dish to corned beef and cabbage? I am going to a St Paddy's Day party and wasn't sure what to bring. I guess I could bring some Irish soda bread?
I either use a large crock pot or a large pan with cover. I put the corned beef and spice package in the pan and cover it with cold water and heat up to a slow simmer. I add whole baby carrots at that time and potatoes cut up. It is suppose to slow cook half the day. The last couple of hours I add cabbage cut into quarters, all in the same water and pan to get that great corned beef taste. I love that stuff!

You're not hijacking! I made mine last night, so everyone is now free to suggest side dishes. I think potatoes and carrots would be great with it. Maybe some hot rolls...yum!
