Good advice.

Unfortunately Vancouver has thieves who look for valuable in cars. Never leave anything while parked on the street or in a parkade that isn't secure.
They'd steal an empty cardboard box if it was left on the seat.

You said would ""require carrying bags all day".

OP said kids are "1 child and 1 toddler". Not clear how old the "child" is, but at least not a "teen" (under 13), so should be able to tote some stuff in a "day pack". A "toddler" is defined as between 1 and 3, so no longer an "infant". I recommended that only a stroller would need to be taken on the train, which should have places to store "stuff", like formula, diapers, etc. The mother and/or father could also carry extra needed items in a shoulder bag and/or day pack. None of that is particularly burdensome. Note: If needing a "car-seat" to get to the light-rail or train station, it could be stored in a locker at the train station and retrieved after returning.

As noted by someone else, leaving items in sight in a vehicle is an invitation for a break-in.
