Is not so much organs. You usually don't get good results if you tell people your sausage has sinus and nasal cavity tissue in it.

To be fair, the higher quality stuff you get from a butcher, has actual meat in it. But when you go and by the processed crap in a plastic tube - theres no telling.

At least its still tasty!

I have always enjoyed La Parilla even though it is not exactly a hole-in-the-wall type place. Ate there three or four times on my last visit.

I certainly know about lamb's brain! It's delish (I’d imagine so may be the monkey’s)! In its absence, I might be willing to try Chorizo's brain...

Its not that good. A little tough and chewy. Very bland.

Even bland brains can't be tough. It's most likely OK - for gourmet purposes that is.
