Observation: Turbo Air beverage cooler has a torn door gasket. Must replace gasket. Walk in freezer in dry storage area has a large crack in the floor and multiple cracks in the walls. Floors and walls must be smooth, easily cleanable, and nonabsorbent.

Light under hood system near baking dry storage rack is missing the light cover. Replace cover or provide a shatter resistant light to prevent broken glass contamination.

Cinnamon sugar working container was not labeled. Must label white powders if stored in a working container to ensure proper identification.
- Sanitization of food contact surfaces - before use and after cleaning
At start of inspection dish machine was not at proper sanitize temperature ( read 156 degrees F plate surface temp). Staff was still using unit. Must wait to use machine until sanitizer temperature reads 180 degrees on external thermometer and 160 degrees for plate surface temp. Dishes were re-washed. Suggest running a few empty rack to aid machine to reach temperature before dishes. Corrected on site.

Pressure gauge is broken therefore water pressure for dishmachine can not be varified. Must repair gauge to ensure pressure is maintain ed between 15 and 25 psi to ensure adequate water contact time with dishes. (sanitizing temp and time).
