    Observation: Items in pizza prep table not at 41 degrees or below: Shredded cheese 45.5 degrees, cheddar shredded cheese 54.9 degrees, beef crumbles - 57.3 degrees, sliced ham 52.6 degrees. Gravy in bottom of pizza prep table at 47.1 degrees. Items in sandwich prep table not at 41 degrees or below: Chicken 51.3 degrees
  • Equipment and utensils are adequately rinsed after washing
    Observation: Improper three compartment sink sequence: Wash, rinse sanitize.
  • A temperature measuring device with a suitable small diameter probe is provided and readily accessible to measure the temperature of thin foods
