Observation: Butter (50.3F), sauce (50.4F), lettuce greens (52.1F) not cold-holding in Vulcan cooler. Ambiant air temperature holding at 49F. Person In Charge stated food items likely were above cold-holding temperature overnight. Person In Charge discarded all food items needing cold-holding. Food items not needing cold-holding were move to other coolers. Vulcan cooler will not be used until serviced and verified to proper cold-holding.

Observation: Inside of the kitchen microwave has debris build up. Alto Sham has debris build up on the inside.

Observation: Containers of food in the main prep cooler are not date marked. Corrected.

Observation: Debris build up on the blade of the table mounted can opener. Debris build up on the inside of the ice machine. Cleaned.

Observation: Hand washing reminder signs missing at bar,kitchen and restroom hand sinks. Inspector left signs.

Observation: Build up on floors under the coolers. Hood vents above fryer need to be cleaned.
- Food employees hair is effectively restrained
Observation: Employee preparing food is not wearing a hair restraint.
