  • Manual and mechanical warewashing equipment, chemical sanitation - temp, pH, concentration, and hardness
    Observation:Observed no detectable level of sanitizer in dishwashing machine. Container was empty, replaced, primed machine to remove air from dispensing tube. Corrected on site.
  • equipment food contact surfaces and utensils clean to sight and touch.
    Observation:Observed grease and food particles on plastic lids and containers, metal steampan and fry basket - the container of detergent was empty at the dishwashing machine, which could be the cause of the buildup. Employee removed soiled equipment to be scrubbed by hand then placed into dishwashing machine, corrected on site.
  • Heating, ventilating, and air conditioning systems design, installation, and cleaning
    Observation:Observed heavy grease and dust accumulation on filters above broiler
  • Handwashing cleanser, availability
    Observation:Observed no handsoap at dispenser at the dishwashing area handsink - employees agree to use the kitchen handsink until the truck arrives with new soap. Corrected on site.

    Significant food debris under shelving and equipment and in corners (misc. items being stored along walls, etc. are preventing adequate cleaning).
  • In-use utensils, between-use storage
    Observed ice scoop at the drive-thru being stored in a soiled container that was also holding water.
  • Heating, ventilating, and air conditioning systems design, installation, and cleaning
    Dust accumulation on some ceiling tiles in the kitchen (REPEAT FROM PREVIOUS INSPECTION).
  • Duties of PIC
    Required training is not being performed for Norovirus (Norovirus is not currently included in the illness reporting policy).
  • Removing dead or trapped birds, insects, rodents, and other pests
    Significant amount of dead insects on the floor in areas of the kitchen (areas are currently not easily accessible).
  • When to wash
    Observed an employee place raw sausage patties on the cooktop and then proceed to move on to other tasks without washing hands. Management was made aware of the situation and made correction immediately.
