    Observed employee use damp cloth to clean thermometer, cutting board and kitchen countertop - there was only soap in bucket, no sanitizer. Corrected.
  • Separating raw animal foods from raw ready to eat food and separating raw animal food from cooked ready to eat foods
    Observed raw shell eggs stored above cooked ham and container of gravy in kitchen refrigerator - corrected. Observed employee handle raw eggs and bacon with bare hands then handle spatulas, knife and other surfaces without washing hands first - corrected.
  • Food shall be obtained from sources that comply with law
    Observed pure maple syrup from an outside source for sale at front counter - products are not labeled with name and address of processor, there is no proof that processor is licensed as a food processor. Removed from sale - corrected.
  • Cleaning procedure
    Observed employee handle raw eggs and bacon with bare hands then handle spatulas, knife and other surfaces, then wash hands in sanitizer bucket, ahnds were later washed at the kitchen handsink. Corrected.
  • Date marking for ready to eat, PHF/TCS food prepared on-site or opened commercial container held for more than 24 hours
    Sliced and diced ham and thawing country gravy were not labeled with date of preparation - corrected.
  • Food temperature measuring devices are provided and readily accessible
    There is no digital, instant-read food thermometer with thin-diameter probe for monitoring food temperatures, repeat.
  • Poisonous or toxic materials used and applied
    Observed sanitizer was in excess of required concentration at three compartment sink - corrected.
