    Observation:Observed cut lettuce stored in prep cooler that is not functioning properly, lettuce was 51 degrees. Top half of unit appears to be working, but the bottom half was at 60 degrees.
  • Bare hand contact with ready to eat foods
    Observation:Observed employee handle panini with bare hands, hands washed and gloved, corrected on site.
  • Sanitization methods - hot water, chemical
    Observation:Establishment uses hot water to clean the ice cream machine, there is no sanitizer available.

    Observation:Observed freezer and paper products stored in garage - there is no separation from the garage and personal items from area used for the business.

    Observation:Observed foods canned on site (jalapenos, tomato-based sauces, salsa, pickles) - establishment does not have approval for process authority to prepare and sell these shelf-stable foods. Foods were removed from sale, corrected on site.

    Observation:Test papers for the quat sanitizer were not able to be found. There are no chlorine test papers.
