Observation:In process yet of finishing flooring in RR and dining room, must provide smooth, cleanable surfaces ie seal edge between floor and wall juncture or provide base coving to aid cleaning in RR and dining room. 2)Some coving missing along the wall edge by the grill area, replace. 3)Caulk missing along right hand edge of three compartment sink, replace. 4) Vent s in dishmachine area are rusty, plans to repeint to make smooth, cleanable surfaces. 5)Plans to remove one fan in dishmachine area. 6)Replace any ceiling tiles now removed for repairs.

Observation:Need to seal the light coming through the edges of the back door in kitchen, to prevent pests from entering.

Observation:1) Clean new ice bin before usage. 2) All food contact surfaces in kitchen need to be cleaned and sanitized once construction has been completed, dusty now.

Observation:1) Has cases of frozen food on floor in walk in freezer, must store all foods at least 6 inches off floor. 2) Has one black plastic shelving unit set up close to floor, must adjust lowest shelf to be at least 6 inches off floor to aid cleaning.

Observation:Must provide a culinary sink wtih indirect drain line to floor sink in this area, with one inch air gap for food prep needs. Will need splash guards to protect from contamination by surroundings. --Observation:Reach in prep cooler facing grills has deep crevice just inside the front doors, must repair/caulk to aid cleaning and decrease chance for trapped food particles. 2) Clean floors walk in coolers and freezers, soiled.

Observation:Two endcaps missing on two bulbs above the beverage servive area, replace.

Observation:Has several containers of food, spices, flours,sugars, that are open and have become contaminated with construction dust. Must discard all opened food containers now before restock with new supplies.

Observation:Has some chemicals stored on shelving rack with food products, must keep all chemicals separate from food and food prep items, either store beneath or not directly adjacent to food and food service items.

Observation:Kitchen hood system is dusty and soiled, plans to have serviced soon to clean to exterior and interior deep cleaning, probably tomorrow.
- Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing.
Observation:Need thermometer for True cooler near the beverage area.
