    Observation:No certified food protection manager onsite

    Observation:fresh made tuna spread for sandwiches is not date marked.
  • Using a handwashing sink- operation and maintenance
    Observation: Both hand washing sinks had dishes in them.

  • Handwashing signage
    Observation: The employee must wash their hands sign is posted but is not visible due to it is posted behind the handwashing sink only sign.Place the orange sign when employees must wash their hands so it is visible.

    Observation: The ice machine has some buildup on the chute edge. SHALL CLEAN AS OFTEN AS NECESSARY TO KEEP CLEAN. THIS IS A REPEAT VIOLATION.
  • Restricted use pesticide applied by a certified applicator
    Observation: A spray bottle of "RAID" in the food establishment. ALL food establishments are only allowed to use approved insecticides for a food establishment. The RAID was discarded during this inspection. CORRECTED ON SITE.
  • Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing.
    Observation: The cooler had a broken temperature measuring device. ALL cooling units shall have working thermometers. A NEW thermometer was placed in the cooler during this inspection. CORRECTED ON SITE.
  • Food storage containers identified with common name of food
    Observation: At the front counter shaker containers were not labeled. Such as: the salt, pepper and the parmesan cheese said oregano. ALL WERE CORRECTED ON SITE.
  • Light intensity
    Observation: The upright cooler on the right side has a burned out light bulb. This area has approved cover. Replace the light bulb.
  • Using a handwashing sink- operation and maintenance
    Observation: The back warewashing area has four sinks the first sink SHALL BE USED AS A HANDWASHING SINK ONLY NOT A RINSE SINK. THIS SINK HAS SOAP ABOVE THE FIRST SINK AND PAPER TOWELS AVAILABLE. The paper towel dispenser is available but when possible place closer to the sink for convenience when handwashing. THIS IS A REPEAT VIOLATION.

    First compartment of four compartment sink is to be used for handwashing only, uses for spraying of dirty dishes, must use rinse compartment for that activity and then surface spray dishes if need to keep sink open for rinsing. Corrected now.

    Shakers for spices at prep table are not labeled with common name, must label to prevent confusion.

Cardboard should not be reused for any purpose than its original contents. 2) Gasket in reach in cooler at front counter is soiled and right door torn, clean and replace torn gasket.
