    Observation: Several deli meats not date marked in walk-in cooler. Date marked. Corrected.

    Observation: Used mop was stored in the mop bucket between uses. Removed. Corrected.

    Observation: Observed a cup used as a scoop in dry products (oregano). If scoop is stored in product then it must have a handle and the handle must be stored outside of the product.

    Observation: Sanitizer was tested too low at time of inspection. Remade.

    Observation: Hand sink in kitchen area drains slowly. Repair or replace as necessary.

    Observation: Mop was observed bunched up in the mop sink. Must allow mop to air dry when not in use to prevent buildup of bacteria.

    Observation: True 3 door cooler did not have a thermometer inside. Replaced.

    Observation: Did not have a hand washing sign posted in the womens bathroom. Must have a hand washing sign posted in all bathrooms used by food service employees.

    Observation: Observed some items that were date marked and some that were not (deli meat, cheese, prepped veggies, etc.). Must date mark all ready to eat food with date opened/prepared.

    Observation: All door gaskets on the True 3 door cooler have become torn. Replace.

    Slicer was soiled. Must keep clean to prevent buildup of bacteria. Must clean especially behind blade and around blade guard.

    Bags of ice were observed in walk in freezer and bag of onions in walk in cooler were both on the floor. Must store all food items at least 6 inches off the floor to prevent contamination.
  • Food storage containers identified with common name of food
    Shaker at prep table was not labeled. Must label all working containers with common name of ingredient to allow for easy identification.
  • Handwashing signage
    Handwashing sign was not posted at prep area handsink. Must post a sign informing employees when to wash hands at all handsinks used by food service employees.
